Thanksgiving recipe: Caf stuffing

Thanksgiving is a wonderful time of year. Everything is perfectly festive, from the extra family time to the excess of food. It is the optimal time for relaxation after the crazy weeks of midterms, papers and this year’s presidential election. Each year that goes by, life gets more complicated, so sometimes it is great to come back to classic childhood recipes and enjoy the ultimate seasonal comfort food. This stuffing recipe uses ingredients from the Caf’s sandwich and salad bar and will bring you to a place of nostalgia. Enjoy this delicious and easy holiday favorite before Thanksgiving even starts, because the bulk of the ingredients are right at your fingertips.

CLASSIC CAF STUFFING

INGREDIENTS

8 slices of day-old bread

½ cup of chopped onions

½  cup of chopped celery

½ stick of butter or 3 spoonfuls
½ cup of mushrooms
1 teaspoon of dried thyme
1 cup of chicken or turkey stock
Salt and pepper to taste

SWEET AND SAVORY CAF STUFFING

Add to the recipe during step 3

1 cup of cubed granny smith apple
1 teaspoon of dried sage

GRANDMA’S CLASSIC STUFFING

Add to the recipe during step 4:

1 cup of golden raisins

1 cup of walnuts and or almonds

HEALTHY TIP:

Use low-sodium chicken or turkey stock to make the recipe more healthy.

INSTRUCTIONS

  1. Heat the oven to 325 degrees.

  2. Break apart the bread into one-inch pieces and place into a bowl.

  3. Melt butter on stovetop in a skillet. Add onions, mushrooms, celery and thyme. Cook until soft, stirring continually.

  4. When the vegetable mixture is soft and golden brown, take off of stove top. Slowly stir into bowl with the bread pieces. Add salt and pepper to taste.

  5. Add broth slowly to the bead and vegetables until fully incorporated. The bread should be damp but not overly soggy.

  6. Put into baking dish. Nine by 11 inches is ideal.

  7. Bake for 30-40 minutes or until the top of the stuffing is golden brown.
